Lamm Chops
Chermoula aubergine (eggplant) with bulgar and yoghurt
Shopping list:
augergine (eggplant)
fine bulgur
greek yoghurt
garlic cloves, cumin, coriander, chilli flakes, preserved lemon skin, olive oil, green olives, fresh mint and coriander, almond flakes, sultanas raisins
spring onion
1. Soak the raisins in warm water, Oven 200 Celsius
2. To make a "Chermoula", mix in a bowl:
Garlic, cumin, coriander, chilli, paprika, lemon juice, olive oil, salt
3. Half-half aubergines and put in the chermoula
oven 40 minutes
4. Cover the bulgur in a bowl with 140 ml boiling water
5. Mix bulgur + raisins + remaining olive oil + fresh herbs + olives + spring onions + almonds + lemon juice + salt
6. Serve the aubergines and spoon bulgar on top + yoghurt + fresh coriander + drizzle of oil
